Butter's Mango Magic Cookie.
So you went to Adelaide, took photos, ate good food, got paid, good for you, Harvard, good for you.
What about me? What about us?
Well, you get a cookie recipe.
Perhaps the cookie recipe with the longest backstory ever.
When I was video chatting with Diem I was expecting to write the normal interview that ends with a recipe.
But if every recipe-sharing post goes off a tangent and ends with a weekend interstate shoot, I’m not going to complain.
I don’t think Diem had any reason for this, except that mango and coconut go well together.
I didn’t have enough dried mangos, so I snuck in dried apricots.
I’m sure other dried fruits work too.
To make it more coconut-y, I also used coconut sugar.
Ingredients
115gm unsalted butter, soft
50gm granulated sugar
55gm light brown sugar
1 large egg, room temp
1 tsp vanilla extract
160gm plain flour
1/2 tsp baking soda
1/2 tsp sea salt
100gm rolled oats
50gm desiccated coconut
150gm dried mangoes, roughly chopped
85gm white choc, roughly chopped
50gm macadamia or almond, roughly chopped (optional)
Method
In a large bowl (or stand mixer) cream butter, white sugar, and brown sugar
Add egg and vanilla, mix until incorporated
In a small bowl, add flour, baking soda, oats, coconut, and sea salt - mix to combine
Add flour mixture to butter mixture
Fold in mango and white choc (and nuts, if using)
If the mixture is very sticky (hard to handle), put in the fridge for 30 mins
Roll into 50gm balls (around a tbs)
You can refrigerate or freeze the cookie balls at this point
Preheat the oven to 180°C
Bake cookies for 6 mins, then rotate the tray and back for a further 5-6 mins
Let cookies cool a bit - enjoy!
The rolled oats and coconut immediately reminded me of Anzac cookies, with little bursts of dried fruits for sweetness, instead of golden syrup. A better choice for lunchboxes.
Looking back, I used normal chocolate chips, sprinkled with some sea salt flakes.
